Raspberry Coconut Cooler Recipe

I made this drink on a total whim with a handful of raspberries and an open can of coconut milk — and wow, it tasted like vacation in a glass. It’s cool, creamy, and just tart enough to keep things interesting. Now, it’s one of my favorite “reset” drinks when I want something refreshing but a little different. Bonus: it’s super pretty and takes less than 5 minutes.
Ingredients:

½ cup fresh or frozen raspberries

½ cup light coconut milk (from a can)

½ cup cold water or coconut water

Juice of ½ lime

1–2 tsp honey or maple syrup (to taste)

Ice cubes

Garnish: raspberries, mint, or lime slice
Instructions:

In a blender, combine raspberries, coconut milk, water, lime juice, and sweetener.

Blend until smooth, then pour over ice.

Garnish with a few berries or a sprig of mint.

Serve immediately and enjoy the creamy tropical refresh!
