Peach Raspberry Refresher Recipe

One of my favorite summer combos is peach and raspberry — juicy, sweet, and just a little tart. I first made this drink on a hot afternoon when I didn’t want anything heavy. It turned out so light and refreshing, I now keep frozen raspberries on hand just for this. It’s great for sipping on the patio or serving at brunch and it’s as pretty as it is tasty.
Ingredients:
-
½ ripe peach, thinly sliced (or ½ cup frozen peach slices)
-
¼ cup raspberries (fresh or frozen)
-
Juice of ½ lemon
-
1–2 tsp honey or maple syrup (to taste)
-
1½ cups cold sparkling water
-
Ice cubes
-
Optional garnish: peach slices, raspberries, lemon wedge
Instructions:
-
In a glass or small pitcher, muddle peach slices, raspberries, lemon juice, and sweetener.
-
Add ice and pour in sparkling water.
-
Stir gently and garnish with extra fruit.
-
Serve immediately while cold and fizzy.
