Spicy Grilled Scallops Recipe

The first time I made scallops at home, I was so nervous I’d overcook them. But once I tried them on the grill with a spicy seasoning and a squeeze of lime? Game over. They cook in just minutes, and suddenly I had a dish that felt gourmet without any stress. These spicy grilled scallops are my go-to when I want something light, fancy, and fast.
Ingredients:
-
1½ lbs large sea scallops (patted dry)
-
1 tbsp olive oil
-
1 tsp smoked paprika
-
½ tsp garlic powder
-
½ tsp cayenne pepper (or to taste)
-
½ tsp salt
-
¼ tsp black pepper
-
Lime wedges, for serving
-
Optional: chopped cilantro or parsley for garnish
Instructions:
-
Prep the scallops
Rinse scallops and pat them completely dry with paper towels. Toss with olive oil and seasoning mix: paprika, garlic powder, cayenne, salt, and pepper. -
Preheat the grill
Heat your grill or grill pan to medium-high heat. Clean and oil the grates well to prevent sticking. -
Grill the scallops
Place scallops directly on the grill. Cook for about 2–3 minutes per side, until golden brown and just opaque in the center. Don’t overcook — they go fast. -
Serve
Plate immediately with a fresh squeeze of lime juice and sprinkle with chopped herbs. Serve with rice, grilled vegetables, or over a crisp salad.
