Frozen Mint Mojito Recipe

You ever have one of those days? When everything’s loud, your to-do list is a mile long, and the kids are asking for snacks again?
That’s when I head to the kitchen and make this Frozen Mint Mojito. It’s icy, minty, tangy, and just… resets me. No rum, no guilt — just simple, fresh ingredients that make me feel like I’m at a spa instead of my cluttered kitchen.
This one has saved me more than once. It’s become my summer “zen-in-a-glass.”
Ingredients
-
1 ½ cups ice
-
Juice of 1 lime
-
Zest of ½ lime (optional but adds a punch)
-
1–2 tsp honey or a few drops of liquid stevia
-
6–8 fresh mint leaves
-
1/2 cup cold water or coconut water
-
Optional: splash of sparkling water on top for fizz
Instructions
-
Blend it up
Add ice, lime juice, lime zest, honey or stevia, mint leaves, and water into a blender. Blend until smooth and slushy. -
Taste & adjust
Add more mint or lime if you want a bolder flavor, or more sweetener to taste. -
Serve cold
Pour into glasses and (optional) top with a splash of sparkling water for that mojito fizz. -
Garnish (optional)
Mint sprig and lime wedge make it feel fancy — even if you’re drinking it in yoga pants.
Sarah’s Tips
-
Use crushed ice if your blender needs a little help.
-
Add a few cucumber slices to the blender for a spa twist.
-
Want a nighttime mocktail? Add a drop of vanilla extract — sounds weird, but it’s amazing.
-
Freeze mint leaves in ice cubes for an extra pretty finish.
