Tropical Mint Fusion Recipe

Some days, I just need to feel somewhere else. Between the piles of laundry, dishes, and kid chaos… it’s easy to forget what calm even feels like.
That’s when I started making this Tropical Mint Fusion. It began as a way to use up leftover pineapple. But the moment I added lime and mint? Instant mood-lifter. It tasted like a mocktail on vacation — minus the sugar crash.
Now I sip it anytime I need a boost. It’s light, energizing, and feels like self-care in a glass.
Ingredients

1/2 cup fresh pineapple chunks (or frozen)

Juice of 1/2 lime

1/4 cup cucumber slices

2 sprigs fresh mint

2 cups cold coconut water or filtered water

1/2 cup ice

Optional: 1 tsp chia seeds or a few drops of liquid stevia
Instructions

Muddle the flavor
In a mason jar or glass pitcher, lightly mash pineapple, cucumber, mint, and lime juice to release flavor. -
Add liquid + ice
Pour in coconut water (or plain water) and ice. Stir everything together. -
Optional extras
Add chia seeds for a fun texture and extra hydration — or stevia for sweetness. -
Let it infuse
Sip right away or let sit 5–10 minutes to deepen the flavor.
