Ingredients:

  • 1 cup Greek yogurt (full-fat for creaminess)

  • 1 cup heavy cream or coconut cream (chilled)

  • ½ cup key lime juice (fresh or bottled)

  • 1 tbsp key lime zest

  • ⅓ cup honey or maple syrup

  • 1 tsp vanilla extract

  • Pinch of sea salt

  • Optional: crushed graham crackers or almond cookies for serving

  1. Whip the cream:
    In a mixing bowl, whip the chilled cream until soft peaks form. Set aside.

  2. Mix the base:
    In another bowl, whisk together Greek yogurt, key lime juice, zest, honey, vanilla, and salt until smooth.

  3. Fold it all together:
    Gently fold the whipped cream into the yogurt mixture until fully combined and fluffy.

  4. Freeze:
    Pour into a loaf pan lined with parchment. Smooth the top and freeze for 4–6 hours or until firm.

  5. Serve:
    Let sit for 5–10 minutes before slicing. Serve with crushed grahams or a dollop of whipped cream.

 

💡 Tips:

  • No key limes? Regular lime juice works too!

  • Make it dairy-free with coconut cream and coconut yogurt.

  • Slice thinly — it’s rich and goes a long way!
