Ingredients:

For the Marinade:

  • 1/4 cup low-sodium soy sauce

  • 2 tbsp honey or maple syrup

  • 1 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 2 garlic cloves, minced

  • 1 tsp fresh grated ginger

  • 1/2 tsp red pepper flakes (optional)

For the Skewers:

  • 1 lb duck breast or boneless duck thighs, cut into 1.5" cubes

  • Wooden or metal skewers

  • Sesame seeds and chopped green onions for garnish

 

Instructions:

  1. Soak skewers: If using wooden skewers, soak them in water for 15–20 minutes.

  2. Marinate duck: In a bowl or zip-top bag, whisk together marinade ingredients. Add duck cubes and marinate for at least 20 minutes (or up to 4 hours in the fridge).

  3. Grill: Preheat grill to medium-high. Thread marinated duck onto skewers and grill for 3–4 minutes per side, or until cooked through and slightly charred.

  4. Serve: Garnish with sesame seeds and green onions. Serve with jasmine rice, cucumber salad, or lettuce wraps.

  • Add veggies: You can alternate duck with bell peppers or red onion on the skewers.
