Skillet Corn, Zucchini & Chicken Recipe

½ tsp smoked paprika

Instructions:

Cook the chicken
Heat oil in a large skillet over medium heat. Add chicken, season with paprika, onion powder, salt, and pepper. Cook 6–8 minutes, stirring occasionally, until golden and cooked through. Remove from skillet and set aside. -
Sauté the veggies
In the same skillet, add a little more oil if needed. Add garlic, zucchini, bell pepper, and corn. Sauté 5–6 minutes until veggies are tender-crisp. -
Combine & finish
Return chicken to the skillet and toss everything together. Taste and adjust seasoning. Squeeze a little lemon over the top for brightness if desired. -
