Grilled Feta with Herbs Recipe

I first had grilled feta on a little beach trip — tucked into foil, drizzled with oil and herbs, and grilled until it was soft, warm, and just starting to melt. It was served with bread and we tore into it under the sun like it was the best thing we’d ever tasted (because it kind of was). When I got home, I had to recreate it. Now, it’s my favorite quick appetizer for warm evenings or when I want a little taste of the Mediterranean without leaving my backyard.
Ingredients

1 block feta cheese (about 6–8 oz)

1 tablespoon olive oil

1 teaspoon dried oregano (or thyme/za’atar)

½ teaspoon crushed red pepper flakes (optional)

Fresh cracked black pepper, to taste

Parchment-lined foil or grill-safe small cast iron dish

Bread or pita for serving
Instructions

Preheat your grill to medium heat.

Place the feta block on a piece of foil or small grill-safe dish.

Drizzle with olive oil and sprinkle with herbs, pepper, and red pepper flakes.

Wrap gently in foil (or leave open for more charred edges).

Grill over indirect heat for 7–10 minutes, until soft and slightly browned.

Serve warm with toasted bread or pita.
