Grilled Cheese and Tomato Sandwich Recipe

This sandwich reminds me of Saturday lunches with my mom. She always added a slice of tomato to her grilled cheese — and at the time, I didn’t get it. But now? It’s the only way I make it. The tomato adds this juicy brightness that cuts through the richness of the cheese, and when it all crisps up golden on the grill… magic. I make this when I want something warm and nostalgic, but just a little more grown up.
Ingredients

4 slices of bread (sourdough or whole grain work great)

2 tablespoons butter, softened

4 slices cheddar cheese (or any melty cheese you love)

1–2 medium tomatoes, thinly sliced

Salt and black pepper, to taste

Optional: a pinch of dried basil or a swipe of Dijon mustard
Instructions

Preheat your grill or grill pan to medium heat.

Butter one side of each bread slice.

On the unbuttered side, layer cheese, tomato slices, and season with a little salt and pepper. Add basil or mustard if using.

Top with the second slice of bread, buttered side out.

Grill for 2–3 minutes per side, pressing lightly, until bread is golden and cheese is melted.

Slice in half and serve warm.
