Grilled Mozzarella Sandwich Recipe

There’s just something about melted mozzarella that makes everything better. I started making this sandwich during one of those “I have nothing in the fridge” moments — and it turned into a favorite. I use thick bread, creamy mozzarella, and let the grill do its thing until it’s golden, gooey, and full of those dreamy cheese pulls. It’s simple, cozy, and exactly the kind of lunch that makes a regular day feel just a little more special.
Ingredients

4 slices of sturdy bread (like sourdough or ciabatta)

2 tablespoons butter, softened

4–6 oz fresh mozzarella, sliced

Optional: 1–2 slices of tomato, fresh basil, or a smear of pesto

Salt and black pepper, to taste
Instructions

Preheat grill or grill pan to medium heat.

Butter one side of each slice of bread.

On the unbuttered side, layer mozzarella and any optional extras.

Top with second slice of bread, buttered side out.

Grill 2–3 minutes per side, pressing lightly, until golden and cheese is fully melted.

Let it rest for 1 minute, then slice and enjoy warm.
