This Skillet Chicken Broccoli Alfredo is my healthier take on a restaurant favorite — but with no heavy cream, no weird thickeners, and no extra pans to wash. The chicken is juicy, the broccoli is perfectly tender, and the creamy garlic-Parmesan sauce ties it all together in the best way.

Whether you're feeding picky eaters or craving something warm and hearty for yourself, this is one of those dinners that feels like a hug in a bowl — without the food coma afterward.

 

Ingredients:

  • 1 lb boneless, skinless chicken breast, sliced thin

  • 2 cups broccoli florets (fresh or frozen)

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • ¾ cup low-sodium chicken broth

  • ½ cup plain Greek yogurt

  • ¼ cup grated Parmesan cheese

  • Salt and pepper to taste

Instructions:

  1. Cook the chicken

    Push broccoli to the side and add garlic to the pan. Cook 30 seconds, then pour in broth and bring to a simmer. Reduce heat and stir in Greek yogurt and Parmesan until creamy and smooth.

  4. Bring it all together
    Add chicken back to the skillet and stir to coat with sauce. Simmer for 1–2 minutes to warm through. Adjust seasonings and finish with lemon juice if using.

  5. Serve warm
    Serve as-is for a low-carb meal or pair with whole wheat pasta, cauliflower rice, or quinoa for a heartier option.
