🍓 Healthy Blackberry Trifle

Ingredients:

  • 2 cups fresh blackberries

  • 2 tbsp honey or maple syrup

  • 1/2 tsp vanilla extract

  • 2 cups plain or vanilla Greek yogurt (or coconut yogurt for dairy-free)

  • 1.5 cups almond pound cake or angel food cake, cubed (store-bought or homemade)

  • Optional toppings: crushed almonds, lemon zest, or mint leaves

  1. Sweeten the berries:
    In a bowl, gently toss blackberries with honey and vanilla. Let sit for 10 minutes to get juicy.

  2. Layer the trifle:
    In small jars, glasses, or a trifle bowl, layer cake cubes, a spoonful of yogurt, and a layer of berries. Repeat until full.

  3. Top it off:
    Finish with a few berries on top, a sprinkle of lemon zest, and crushed almonds or mint if using.

  4. Serve or chill:
    Serve immediately or refrigerate for up to 2 hours. It’s best cold on a hot day!
