Loaded Chili Cheese Fries Recipe

This is not diet food. This is lounge-on-the-couch-in-stretchy-pants food. The kind that makes people stop talking after the first bite and just go “mmm.”
I started making these Loaded Chili Cheese Fries on football Sundays, but honestly? We don’t even need a reason anymore. Crispy fries, beefy chili, melted cheese — it’s pure comfort, baked or fried, messy in the best way, and absolutely unforgettable.
Ingredients
For the fries:

1 bag frozen crinkle-cut or steak fries (or fresh-cut if preferred)

Olive oil spray or neutral oil for baking/frying

Salt to taste
For the chili topping:

1/2 lb ground beef

1/4 cup chopped onion
-
1 garlic clove, minced

1 tbsp tomato paste
-
1/2 cup canned diced tomatoes (or salsa)

1/2 cup canned kidney or black beans (optional)

1 tsp chili powder
-
1/2 tsp cumin
-
Salt + pepper to taste
For the cheese:

1 1/2 cups shredded cheddar cheese (or a cheddar-jack blend)

Optional: nacho cheese sauce for extra drippy goodness
Toppings:

Chopped green onions
-
Jalapeño slices
-
Sour cream or ranch drizzle

Hot sauce (if you like it spicy)
Instructions

Cook the fries
Bake or air fry the fries according to package instructions until crispy. Season with salt. -
Make the chili
In a skillet, cook ground beef and onion over medium heat until browned. Add garlic, tomato paste, and spices. Stir in tomatoes and beans. Simmer for 10 minutes, stirring occasionally, until thickened. -
Assemble
On a large sheet pan or serving dish, layer the fries, spoon over hot chili, and sprinkle generously with shredded cheese. -
Melt it all
Return to oven (or broil) for 3–5 minutes until the cheese is fully melted and bubbly. -
Add toppings & serve
Garnish with green onions, jalapeños, and a drizzle of sour cream or ranch. Serve hot and don’t forget napkins!
