Every time I bring these Cheddar Jalapeño Poppers to a gathering, they’re gone in five minutes. Crispy on the outside, creamy and cheesy inside, and just the right amount of heat — they’re comfort food with a spicy twist.

The combo of sharp cheddar and fresh jalapeños is classic, but making them from scratch takes it up a notch. And honestly? They’re way easier than you’d think — no deep fryer required if you want to bake or air fry them!

 

Ingredients

  • 10 fresh jalapeños

  • 4 oz cream cheese, softened

  • 1 cup sharp cheddar cheese, shredded

  • 1/2 tsp garlic powder

  • 1/4 tsp smoked paprika

  • Salt & pepper to taste

For the coating:

  • 1/2 cup all-purpose flour

  • 2 large eggs, beaten

  • 1 cup seasoned breadcrumbs (panko for extra crunch)

  • Optional: a pinch of cayenne or chili powder in the breadcrumbs

For frying:

  • Vegetable oil for frying (or use oven/air fryer instructions below)

 

Instructions

  1. Prep the jalapeños
    Slice each jalapeño in half lengthwise and scoop out seeds and membranes (use gloves!). Set aside.

  2. Make the filling
    Mix cream cheese, shredded cheddar, garlic powder, paprika, salt, and pepper in a bowl until smooth.

  3. Fill the peppers
    Spoon the cheese mixture into each jalapeño half, smoothing the top.

  4. Bread the poppers
    Dip each filled pepper in flour → egg → breadcrumbs. Press gently so the coating sticks. Chill in the fridge for 10 minutes.

  5. Cook the poppers

    • To fry: Heat oil to 350°F and fry poppers 2–3 minutes until golden brown. Drain on paper towels.

    • To bake: Spray with oil and bake at 400°F for 20–25 minutes, flipping halfway.

    • To air fry: Air fry at 375°F for 10–12 minutes until golden and crispy.

  6. Serve hot
    Perfect with ranch, sour cream, or even a drizzle of honey if you love sweet + heat.

 

Sarah’s Tips

  • Can’t handle too much heat? Choose larger jalapeños — they’re usually milder.

  • Add crispy bacon bits to the filling for an extra indulgent twist.

  • Make them ahead and freeze before frying — cook from frozen when ready!

  • These also make a killer side to burgers or pulled pork sandwiches.
