The first time I made these…

It was one of those warm days when the fridge needed something cold and creamy. I had a handful of ripe strawberries, a tub of Greek yogurt, and a craving for cheesecake... but not the kind that takes hours or leaves you in a food coma.

So I made these Strawberry Cheesecake Bars — with a nutty crust, a Greek yogurt and cream cheese filling, and a topping of fresh sliced strawberries. The result? Creamy, lightly sweet, and totally satisfying… without turning on the oven for long or loading up on sugar.

These bars are now my go-to healthy summer dessert for BBQs, brunches, and snacky afternoons when I just need a bite of something cool and comforting. 🍓💛

 

🍓 Strawberry Cheesecake Bars Recipe (Naturally Sweetened)

Ingredients

For the crust:

  • 1 ½ cups almond flour

  • ¼ cup coconut oil or butter, melted

  • 2 tbsp maple syrup or honey

  • Pinch of sea salt

For the filling:

  • 8 oz cream cheese, softened (or dairy-free cream cheese)

  • ¾ cup plain Greek yogurt (or coconut yogurt)

  • â…“ cup honey or maple syrup

  • 1 egg

  • 1 tsp vanilla extract

  • 1 tbsp lemon juice

For the topping:

  • 1 cup fresh strawberries, thinly sliced

  • Optional: 1 tsp maple syrup + ½ tsp lemon juice for glaze

  1. 🔥 Preheat oven to 325°F (165°C). Line an 8x8 baking pan with parchment paper.

  2. 🥣 Make the crust: Mix almond flour, melted oil, maple syrup, and salt. Press evenly into the pan and bake for 10 minutes. Let cool slightly.

  3. 🍰 Make the filling: Beat cream cheese, Greek yogurt, honey, egg, vanilla, and lemon juice until smooth.

  4. đź«™ Pour filling over the cooled crust and smooth the top.

  5. ⏲️ Bake for 18–20 minutes, until the edges are set and the center is slightly jiggly.

  6. ❄️ Cool completely, then chill in the fridge for at least 3 hours.

  7. 🍓 Top with strawberries just before serving. Drizzle with glaze if using.

  8. ✂️ Slice into bars and serve chilled!
