Grilled Bacon-Wrapped Pork Medallions Recipe

I made these for the first time when I wanted something a little fancier than burgers — but still easy enough to throw together on a weeknight. These bacon-wrapped pork medallions are perfect for impressing guests — or just making Tuesday dinner feel special without the stress.
Ingredients:

1½ lbs pork tenderloin, sliced into 1½-inch medallions

8 slices bacon

1 tbsp olive oil

1 tsp garlic powder

1 tsp smoked paprika

Toothpicks (to secure the bacon)
Instructions:
1. Prep the Medallions:
Slice pork tenderloin into thick medallions. Wrap each piece with a slice of bacon and secure with a toothpick.
2. Season:
Drizzle with olive oil and sprinkle both sides with garlic powder, smoked paprika, salt, and pepper.
3. Grill:
Preheat grill to medium-high. Grill medallions 4–5 minutes per side, or until pork is cooked through (internal temp 145°F) and bacon is crisped.
4. Rest & Serve:
Let rest for 5 minutes. Remove toothpicks before serving. Serve with a green salad, roasted veggies, or cauliflower mash!
