  • 12 oz green beans, trimmed

  • 1 tbsp water

Instructions

  1. Prep the steak: Pat steak pieces dry with paper towels and season generously with salt and pepper.

  2. Sear the steak bites: Heat oil in a large skillet over medium-high heat. Add steak pieces in a single layer (don’t crowd the pan!) and sear for 2–3 minutes per side until browned. Remove to a plate and set aside.

  3. Cook the green beans: In the same skillet, add green beans and 1 tablespoon of water. Cover and let steam for 3–4 minutes, then uncover and cook until crisp-tender and slightly charred, about 3 more minutes.

  4. Make the garlic butter: Push green beans to the side, reduce heat to medium, and add butter and garlic to the skillet. Stir until melted and fragrant, about 1 minute.

  5. Bring it all together: Return steak bites to the skillet, toss everything to coat in the garlic butter, and cook for another 1–2 minutes until warmed through.

  6. Serve hot: Garnish with fresh parsley or chives if using. Serve as is or with a side of mashed cauliflower, rice, or roasted potatoes.
