Turkey Veggie Stir Fry Recipe

25 minutes gluten free healthy dinner recipes high protein meals low carb one pan meals summer recipes

There are nights I don’t want to think — I just want dinner on the table now. That’s where this stir fry comes in. It’s easy, clean, and you can throw in whatever veggies are in the fridge. The turkey makes it high in protein, and the sauce brings everything together. No takeout guilt. No dishes piling up.

Ingredients:

  • 1 lb ground turkey

  • 1 tbsp olive or avocado oil

  • 2 cloves garlic, minced

  • 1 tsp grated ginger (or 1/2 tsp ground)

  • 1 red bell pepper, sliced

  • 1 zucchini, sliced

  • 1 cup broccoli florets

  • 2 tbsp low-sodium soy sauce (or coconut aminos)

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil (optional)

  • Red pepper flakes or sriracha (optional)

  • Green onions and sesame seeds for topping

Instructions:

  1. Heat oil in a large skillet over medium heat. Add garlic and ginger, sauté 1–2 minutes.

  2. Add ground turkey and cook until fully browned.

  3. Stir in all veggies. Cook 5–7 minutes, stirring often, until just tender.

  4. Add soy sauce, rice vinegar, and sesame oil. Toss to coat.

  5. Top with green onions, sesame seeds, and a pinch of heat if desired. Serve hot!
