Teriyaki Beef Skewers Recipe

These skewers came from one of those “what can I make with what I have?” nights — a little beef, some bell peppers, and soy sauce. Teriyaki Beef Skewers Recipe
Ingredients:
For the Skewers:

1½ lbs flank steak or sirloin, cut into 1-inch cubes

2 bell peppers (any color), cut into chunks

1 red onion, cut into chunks

Wooden or metal skewers (soak wooden skewers in water for 30 minutes)
For the Teriyaki Marinade:

¼ cup soy sauce (or tamari for gluten-free)

2 tbsp brown sugar

1 tbsp rice vinegar

1 tbsp sesame oil

2 garlic cloves, minced

1 tsp grated fresh ginger

1 tsp cornstarch + 1 tbsp water (optional for thickening)
Step-by-Step Instructions
1. Make the Marinade
In a bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
Optional: Simmer in a small saucepan for 2–3 minutes with cornstarch slurry to thicken.
2. Marinate the Beef
Place the beef cubes in a shallow bowl or zip-top bag.
Pour marinade over the beef and toss to coat.
Let marinate for at least 20 minutes (or up to 4 hours in the fridge).
3. Assemble the Skewers
Thread beef, bell peppers, and onions onto skewers, alternating pieces.
Leave a little space between pieces for even cooking.
4. Grill the Skewers
Preheat grill or grill pan to medium-high heat.
Grill skewers for about 10–12 minutes, turning every few minutes until beef is cooked and vegetables are tender with slight char.
5. Serve
Serve hot with rice, noodles, or a simple salad.
Optional: Drizzle with extra teriyaki sauce or sprinkle with sesame seeds and green onions.
