Tender Grilled Lamb Chops with Rosemary Recipe

I used to think lamb chops were something you only ordered at a fancy restaurant. But once I learned how simple they are to grill at home, they quickly became a special go-to when I want something impressive without the stress.
The rosemary, garlic, and olive oil give the lamb so much flavor. And because they cook fast, this dish feels gourmet but is totally doable on a weeknight. We’ve even made them for summer dinners on the patio, paired with grilled asparagus and a glass of something cold. So simple, but it always feels like a treat.
Ingredients
-
8 lamb rib or loin chops
-
2 tbsp olive oil
-
3 garlic cloves, minced
-
1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
-
1 tsp salt
-
½ tsp black pepper
-
Juice of half a lemon
Instructions
-
Pat the lamb chops dry with paper towels.
-
In a small bowl, mix olive oil, garlic, rosemary, salt, pepper, and lemon juice.
-
Rub the marinade over both sides of the lamb chops. Let sit at room temperature for 20 minutes.
-
Preheat grill to medium-high heat (around 400°F).
-
Grill lamb chops for 3 to 4 minutes per side for medium-rare, or longer to desired doneness.
-
Let rest 5 minutes before serving.
Sarah’s Tips
-
If you don’t have a grill, sear the lamb chops in a hot skillet for 3 to 4 minutes per side, then rest.
-
Pair with a simple side like roasted potatoes or a cucumber-tomato salad.
-
For extra flavor, marinate the lamb for up to 4 hours in the fridge.
