Summer Berry Eton Mess Recipe

When the summer heat rolls in, the last thing I want to do is turn on the oven. That’s when I crave something cold, fresh, and just a little bit indulgent but still light enough to feel good in my body.

This Summer Berry Eton Mess is one of my secret weapons. It’s sweet, tangy, creamy, and crunchy all in one but the best part? It only takes 10 minutes and doesn’t require any fancy steps. It’s become our go-to dessert on warm nights after grilling, and it feels like a treat without leaving you sluggish or bloated. 

Ingredients:

  • 1 cup Greek yogurt (plain or vanilla, full-fat or low-fat)

  • 1 cup mixed fresh berries (strawberries, raspberries, blueberries)

  • 1 tablespoon honey or maple syrup (optional)

  • 2 store-bought or homemade meringue cookies, crushed

  • A few mint leaves (optional, for garnish)

  • Zest of 1 lemon (optional for extra brightness)

 

Instructions:

  1. In a small bowl, gently mix the Greek yogurt with honey or maple syrup if using.

  2. Layer into small glasses or bowls: Start with a spoonful of yogurt, a layer of berries, and a sprinkle of crushed meringue.

  3. Repeat the layers once or twice, ending with berries and a final dusting of meringue.

  4. Garnish with mint leaves and lemon zest if desired.

  5. Serve immediately and enjoy the light, creamy-crunchy goodness!
