Pineapple Lime Cup Recipe

I started making these little pineapple cups when I wanted something cold and juicy after a long hot walk. It’s barely a recipe, but wow — that lime takes it over the top. Tart, sweet, and SO refreshing. Keep a few of these in the fridge and thank me later.
Ingredients:

1 1/2 cups fresh pineapple, chopped

Juice of 1/2 lime

1 tsp honey or maple syrup (optional)

Pinch of chili powder or Tajín (optional)

Fresh mint leaves, for garnish
Instructions:

Place chopped pineapple into a small cup or jar.

Squeeze lime juice over the top.

Drizzle with honey and sprinkle with chili powder if using.

Stir gently, garnish with mint, and chill until ready to serve.
