One-Pan Roasted Tomato Basil Chicken Recipe

This One-Pan Roasted Tomato Basil Chicken is what weeknight dreams are made of — juicy chicken, sweet tomatoes, and fresh basil all baked together in one dish with almost no prep.
The cherry tomatoes burst in the oven and create their own natural sauce, while the balsamic brings just enough richness to pull it all together. It’s light, clean, and full of that slow-roasted flavor — without actually taking all night.
Whether it’s summer and tomatoes are at their peak, or you just want a quick dinner that tastes like something special, this recipe is always a win.
Ingredients:
-
1 tbsp olive oil
-
4 boneless, skinless chicken thighs or breasts
-
1 pint cherry tomatoes, halved
-
2 cloves garlic, minced
-
1 tbsp balsamic vinegar
-
¼ tsp crushed red pepper flakes (optional)
-
Salt & pepper to taste
-
¼ cup fresh basil, chopped (plus more for garnish)
-
Optional: fresh mozzarella or dairy-free cheese for topping
Instructions:
-
Preheat oven
Preheat to 400°F. Lightly grease a sheet pan or baking dish. -
Assemble everything on one pan
Add chicken to one side of the pan. Season both sides with salt and pepper. On the other side, toss cherry tomatoes with olive oil, garlic, balsamic vinegar, red pepper flakes, and half the basil. -
Roast
Bake for 25–30 minutes, until chicken is cooked through (165°F internal temp) and tomatoes are soft and juicy.
If using mozzarella, add it during the last 5 minutes so it gets melty. -
Finish & serve
Spoon the roasted tomatoes and juices over the chicken. Top with extra fresh basil and serve warm.
Sarah’s Tips:
-
Make it a meal: Serve over cauliflower rice, quinoa, or roasted potatoes.
-
Add greens: Toss in a handful of spinach or baby kale before roasting.
-
Cheese swap: Dairy-free mozzarella works great, or skip it entirely for a lighter option.
-
Short on time? Use thin-sliced chicken breasts and roast for just 20 minutes.
Flavorful Conclusion:
This One-Pan Roasted Tomato Basil Chicken is light, flavorful, and so easy to love. Made with clean ingredients and just one dish, it’s the kind of fast dinner that feels like something special — perfect for summer nights or anytime you want that fresh, herby goodness without the mess.
