One-Pan Pesto Chicken and Tomatoes Recipe

Ingredients:

4 boneless, skinless chicken breasts (or thighs)

Salt and pepper, to taste

⅓ cup basil pesto (homemade or store-bought)

1½ cups cherry or grape tomatoes, halved

1 tbsp olive oil

¼ cup shredded mozzarella (optional)

Fresh basil, for garnish
Instructions:

Preheat oven:
Set your oven to 400°F (200°C) and lightly grease a sheet pan or baking dish. -
Season the chicken:
Pat chicken dry and season both sides with salt and pepper. -
Add pesto:
Spread pesto evenly over the top of each chicken breast. -
Add tomatoes:
Toss cherry tomatoes with olive oil, then scatter around the chicken on the pan. -
Bake:
Roast for 20–25 minutes, or until chicken is cooked through (165°F internal temp). Optional: Add mozzarella during the last 5 minutes for a melty topping. -
Serve:
