Juicy pesto-coated chicken baked with sweet cherry tomatoes — fresh, flavorful, and made in just one pan.

I remember the first time I made this recipe — I had a jar of pesto, a pack of chicken breasts, and some tomatoes that needed to be used. And honestly? I wasn’t expecting much.

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)

  • Salt and pepper, to taste

  • ⅓ cup basil pesto (homemade or store-bought)

  • 1½ cups cherry or grape tomatoes, halved

  • 1 tbsp olive oil

  • ¼ cup shredded mozzarella (optional)

  • Fresh basil, for garnish

 

Instructions:

  1. Preheat oven:
    Set your oven to 400°F (200°C) and lightly grease a sheet pan or baking dish.

  2. Season the chicken:
    Pat chicken dry and season both sides with salt and pepper.

  3. Add pesto:
    Spread pesto evenly over the top of each chicken breast.

  4. Add tomatoes:
    Toss cherry tomatoes with olive oil, then scatter around the chicken on the pan.

  5. Bake:
    Roast for 20–25 minutes, or until chicken is cooked through (165°F internal temp). Optional: Add mozzarella during the last 5 minutes for a melty topping.

  6. Serve:
    Garnish with fresh basil and serve hot with your favorite side dish!
