One-Pan Fajita Recipe

There were so many nights I wanted something fresh and flavorful but had zero energy to deal with piles of dishes. That’s how one-pan meals became my secret weapon. These fajitas are one of my absolute favorites colorful, sizzling, and way healthier than takeout. My whole family builds their own wraps, and dinner feels fun instead of frantic.
Ingredients:

1.5 lbs boneless skinless chicken breasts, sliced thin

3 bell peppers (red, yellow, green), sliced

1 large red onion, sliced

2 tbsp olive oil
-
Juice of 1 lime

2 tsp chili powder
-
1 tsp cumin
-
1 tsp paprika
-
1/2 tsp garlic powder
-
1/2 tsp onion powder
-
Salt and pepper to taste

Optional: warm tortillas, avocado, salsa, sour cream, cilantro
Instructions:

Preheat oven to 425°F (220°C).

In a large bowl, combine olive oil, lime juice, and all spices. Add chicken, peppers, and onions. Toss until everything is coated.

Spread mixture evenly on a large sheet pan.

Roast for 20-25 minutes, flipping halfway through, until chicken is cooked and veggies are tender.

Serve with warm tortillas and toppings of your choice.
