chicken recipes dinner ideas family dinner healthy dinner recipes one pan meals quick dinner ideas sheet pan recipes

Tender chicken, roasted veggies, and a tangy-sweet balsamic glaze — all cooked on one sheet pan for a simple, healthy dinner with zero fuss.

If you’ve ever opened the fridge at 5:30pm and just stood there, hoping dinner would make itself… this One-Pan Balsamic Chicken and Veggies is for you.

It’s one of those throw-it-all-on-the-pan kind of recipes that somehow turns into something special. The balsamic glaze gives the chicken a rich, tangy flavor that caramelizes as it roasts, and the veggies soak up all the delicious juices. It’s healthy, colorful, and totally satisfying — and cleanup is basically nothing.

Perfect for nights when you want to eat well but don’t want to overthink it.

Ingredients:

  • 4 boneless, skinless chicken thighs or breasts

  • 2 tbsp olive oil

  • 2 tbsp balsamic vinegar

  • 1 tbsp honey or maple syrup

  • 2 cloves garlic, minced

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • 1 cup baby carrots, halved

  • 1 cup broccoli florets

  • 1 red bell pepper, sliced

  • Optional: fresh parsley for garnish

Instructions:

  1. Preheat oven:
Preheat to 400°F (200°C) and line a sheet pan with parchment paper for easy cleanup.

  2. Make the glaze:
In a small bowl, whisk together olive oil, balsamic vinegar, honey, garlic, Italian seasoning, salt, and pepper.

  3. Toss everything:
Place chicken and veggies on the sheet pan. Drizzle with the glaze and toss everything to coat evenly.

  4. Roast:
Bake for 25–30 minutes, flipping veggies halfway through, until the chicken is cooked through and the veggies are tender and slightly caramelized.

  5. Serve:
Garnish with fresh parsley and serve warm — perfect over rice, quinoa, or as-is!

Sarah’s Tips:

  • Veggie swap: Use what you have! Zucchini, Brussels sprouts, or asparagus all work great.

  • Want extra sauce? Double the glaze recipe and set some aside to drizzle at the end.

  • Make it a meal prep hero: Divide into containers with grains for an easy grab-and-go lunch.

Why You’ll Love It:

This is one of those recipes that makes you feel like you’ve got it together — even when the rest of the day felt like chaos. It’s fresh, flavorful, and everything roasts in the same pan. No juggling pots. No sink full of dishes. Just real food, made simple.
