It was one of those sticky summer days in July, and I just couldn’t bear the thought of turning on the oven. My kids were sweaty from playing outside, and I wanted something cool, fresh, and just a little indulgent to end the day.

I remembered this Key Lime Pie I used to have as a kid on vacation in Florida — that creamy, tangy filling and crunchy graham crust? Heaven. So I decided to make my own version… but with a healthy-ish twist and zero oven required. 🙌

For the filling:

  • 1 can (13.5 oz) full-fat coconut milk (chilled overnight, scoop only the cream)

  • 1 block (8 oz) cream cheese, softened

  • ⅓ cup honey or pure maple syrup

  • ½ cup fresh key lime juice (or regular lime juice)

  • 1 tbsp lime zest

  • 1 tsp vanilla extract

  1. 🥣 Make the crust: Mix graham crumbs, melted coconut oil, honey, and salt in a bowl. Press into a 9-inch pie dish and place in fridge while you make the filling.

  2. 🧁 Prepare the filling: In a large bowl, beat coconut cream, softened cream cheese, honey, lime juice, zest, and vanilla until smooth and fluffy.

  3. 🍋 Pour filling into the chilled crust and smooth the top.

  4. ❄️ Chill in the fridge for at least 4 hours (overnight is best) until set.
