This Icebox Cake became an instant mom win. It’s so simple, but feels like magic — the cookies soften, the cream sets, and the flavors all blend together into something that tastes way fancier than it is.

🍓 No-Bake Icebox Cake Recipe

Ingredients

  • 2 cups coconut whipped cream (or homemade whipped cream)

  • 1 box grain-free or simple ingredient cookies (I use almond flour-based)

  • 1 cup fresh berries (sliced strawberries, blueberries, raspberries)

  • 1–2 tbsp maple syrup or honey (optional, for sweetening the cream)

  • 1 tsp vanilla extract

 

👩‍🍳 Instructions

  1. 🥣 Whip the cream (if homemade): Use a chilled mixing bowl to whip coconut cream, maple syrup, and vanilla until fluffy.

  2. 🍪 Layer cookies in the bottom of a loaf pan or square dish.

  3. 🍦 Spread whipped cream over the cookie layer, then sprinkle with fresh berries.

  4. 🔁 Repeat layers: cookies → cream → berries until all ingredients are used, ending with whipped cream on top.

  5. ❄️ Cover and refrigerate for at least 6 hours or overnight.

  6. ✂️ Slice and serve chilled — top with extra berries or shaved dark chocolate if desired!
