One summer, I was trying to stay hydrated without downing another boring glass of water. I had half a watermelon in the fridge and a handful of mint from my herb pot. I blended it all together with some ice and lime, and it instantly became my go-to summer ritual. It’s light, fresh, and tastes like a spa day in a glass but way cheaper and faster.

 

Minty Watermelon Cooler

Ingredients:

  • 2 cups cold watermelon, cubed and seedless

  • Juice of 1 lime

  • 4–5 fresh mint leaves

  • 1 cup ice

  • ½ cup cold water (or coconut water for a twist)

  • Optional: 1 tsp honey or maple syrup if needed

  • Mint sprigs or lime wheels, for garnish

 

Instructions:

  1. Blend It Up: Add watermelon, lime juice, mint leaves, ice, and water to a blender. Blend until smooth and slushy.

  2. Strain (Optional): For a smoother texture, strain through a fine mesh sieve.

  3. Serve Cold: Pour into glasses and garnish with mint or lime. Serve immediately!

  • Add a pinch of sea salt or a splash of coconut water for natural electrolytes.

  • Freeze watermelon cubes ahead of time for an even icier texture.

  • Want to fancy it up? Serve in a glass rimmed with lime juice and Tajín!
