Lime Coconut Mojito Recipe

When I first started swapping sugary drinks for cleaner options, I missed the fun of cocktails — until I tried this. The combo of lime and mint with creamy coconut water feels like a spa day in a glass. Now, it’s my go-to when I want something fizzy, light, and totally vacation-worthy (even if I’m just in the backyard).
Ingredients:
-
Juice of 1 lime
-
1 cup coconut water (unsweetened)
-
½ cup sparkling water or club soda
-
6–8 fresh mint leaves
-
1 tsp honey or agave (optional)
-
Ice cubes
-
Lime slices and mint sprigs for garnish
Instructions:
-
Muddle the mint:
In a glass or shaker, gently muddle the mint leaves with lime juice and honey to release flavor. -
Mix the base:
Add coconut water and stir (or shake) to combine. -
Add sparkle:
Pour into glasses over ice and top with sparkling water. -
Garnish & serve:
Add a lime slice and mint sprig. Sip and feel the tropical vibes!
Sarah’s Tips:
-
Want it creamier? Add a splash of light coconut milk for a richer twist.
-
Swap sparkling water with plain water for a gentler version.
-
This is perfect for brunches, spa nights, or just sipping on the porch after dinner.
