Lemon Butter Grilled Halibut Recipe

Halibut used to feel “too fancy” for me — like something you’d order at a white-tablecloth restaurant. But the first time I tried it grilled with a simple lemon butter sauce, I was hooked. It’s tender, mild, and so easy to cook at home. I make this when I want something light but still feels like a treat. Bonus: it’s ready in under 20 minutes.

 

Ingredients:

For the halibut:

  • 4 halibut fillets (about 6 oz each)

  • 1 tbsp olive oil

  • Salt and black pepper, to taste

  • Lemon wedges, for serving

For the lemon butter sauce:

  • ¼ cup unsalted butter

  • 1 garlic clove, minced

  • 2 tbsp lemon juice (freshly squeezed)

  • 1 tsp lemon zest

  • 1 tbsp fresh parsley, chopped (or 1 tsp dried)

 

Instructions:

  1. Preheat the grill
    Heat your grill or grill pan to medium-high. Brush halibut fillets with olive oil and season with salt and pepper.

  2. Grill the halibut
    Place fish on the grill and cook for 4–5 minutes per side, or until the fish flakes easily with a fork. Remove and let rest.

  3. Make the lemon butter sauce
    While the fish cooks, melt butter in a small saucepan over low heat. Add garlic, lemon juice, lemon zest, and parsley. Cook for 1–2 minutes, just until fragrant.

  4. Serve
    Drizzle the warm lemon butter over the grilled halibut. Serve with extra lemon wedges, steamed veggies, or a side of rice for a simple, satisfying meal.
