Lemon Butter Grilled Halibut Recipe

Halibut used to feel “too fancy” for me — like something you’d order at a white-tablecloth restaurant. But the first time I tried it grilled with a simple lemon butter sauce, I was hooked. It’s tender, mild, and so easy to cook at home. I make this when I want something light but still feels like a treat. Bonus: it’s ready in under 20 minutes.
Ingredients:
For the halibut:

4 halibut fillets (about 6 oz each)

1 tbsp olive oil

Salt and black pepper, to taste

Lemon wedges, for serving
For the lemon butter sauce:

¼ cup unsalted butter
-
1 garlic clove, minced
-
2 tbsp lemon juice (freshly squeezed)

1 tsp lemon zest
-
1 tbsp fresh parsley, chopped (or 1 tsp dried)
Instructions:

Preheat the grill
Heat your grill or grill pan to medium-high. Brush halibut fillets with olive oil and season with salt and pepper. -
Grill the halibut
Place fish on the grill and cook for 4–5 minutes per side, or until the fish flakes easily with a fork. Remove and let rest. -
Make the lemon butter sauce
While the fish cooks, melt butter in a small saucepan over low heat. Add garlic, lemon juice, lemon zest, and parsley. Cook for 1–2 minutes, just until fragrant. -
Serve
Drizzle the warm lemon butter over the grilled halibut. Serve with extra lemon wedges, steamed veggies, or a side of rice for a simple, satisfying meal.
