Icy Pineapple Mojito Recipe

I made this on a whim one hot afternoon with some leftover pineapple and mint from taco night — and wow. It instantly became one of my favorite warm-weather treats. It’s like a frozen mojito with a tropical twist, minus the alcohol and fuss. Just blend, pour, and sip! The combo of pineapple, lime, and mint is pure sunshine in a glass.
Ingredients:

1 cup frozen pineapple chunks

Juice of 1 lime

5–6 fresh mint leaves

½–1 tsp honey or agave (optional)

½ cup cold water or coconut water

½ cup sparkling water (added after blending)

Ice cubes (optional, for extra frostiness)

Garnish: pineapple wedge, mint sprig, lime slice
Instructions:

Blend frozen pineapple, lime juice, mint, honey, and cold water until smooth.

Pour into a glass and top with sparkling water.

Stir gently and garnish with a lime slice and mint.
