So I created a Homemade Popeyes Chicken Sandwich that delivers the same craveable crunch and juicy center — using clean, real-food ingredients and no deep frying required.

We’re talking tender marinated chicken, a spiced crispy coating, tangy sauce, and that signature crunch — all served up on a toasted bun with pickles. It's big flavor, made better.

 

Ingredients:

For the chicken:

  • 1 lb boneless, skinless chicken breasts (cut in half for sandwich-sized pieces)

  • ½ cup pickle juice

  • ¼ cup plain Greek yogurt or coconut milk

  • 1 tsp hot sauce

  • Salt and pepper to taste

For the breading:

  • ½ cup almond flour or whole wheat breadcrumbs

  • 2 tbsp arrowroot powder or cornstarch

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp cayenne pepper (optional for extra heat)

  • Salt and pepper

  • 1 egg, beaten

For the sandwich:

  • 4 whole wheat or gluten-free sandwich buns

  • Dill pickle slices

  • 4 slices crisp romaine or green leaf lettuce (optional)

For the clean spicy mayo:

  • ¼ cup avocado oil mayo

  • 1 tsp hot sauce (or more to taste)

  • ½ tsp smoked paprika

  • ½ tsp lemon juice

  • Pinch of salt

 

Instructions:

  1. Marinate the chicken
    In a bowl or zip-top bag, combine chicken, pickle juice, yogurt (or coconut milk), hot sauce, salt, and pepper. Marinate for at least 30 minutes or up to 12 hours.

  2. Make the coating
    In one shallow bowl, whisk the egg. In another, mix almond flour, arrowroot, paprika, garlic powder, cayenne, salt, and pepper.

  3. Bread the chicken
    Remove chicken from marinade, let excess drip off, then dip in egg and dredge in the breading mixture. Press to coat well.

  4. Cook the chicken
    Heat 1–2 tbsp avocado oil in a skillet over medium heat. Cook chicken 4–5 minutes per side until golden brown and cooked through. Alternatively, air fry at 390°F for 12–14 minutes, flipping halfway.

  5. Make the spicy mayo
    Mix mayo, hot sauce, paprika, lemon juice, and salt in a small bowl.

  6. Assemble the sandwiches
    Toast your buns, spread spicy mayo on both sides, layer with crispy chicken, pickles, and lettuce if using. Press and serve hot!
