Grilled Halloumi with Vegetables Recipe

The first time I grilled halloumi, I didn’t expect much — just another cheese, right? But the moment it hit the grill and those golden marks appeared, I was hooked. It gets crispy outside, soft and salty inside, and pairs perfectly with grilled veggies. I throw everything on one tray, and within minutes, dinner feels light, fresh, and surprisingly satisfying. It’s my go-to when I want something healthy but don’t feel like cooking. Just fire up the grill, and let the flavors do their thing.
Ingredients

8 oz halloumi cheese, sliced into ½-inch thick pieces

1 zucchini, sliced into rounds

1 red bell pepper, sliced into strips

1 red onion, cut into wedges

1 tablespoon olive oil

1 teaspoon dried oregano or za’atar

Salt and black pepper, to taste

Optional: squeeze of lemon juice, fresh parsley for garnish
Instructions

Preheat your grill to medium-high.

Toss vegetables in olive oil, oregano (or za’atar), salt, and pepper.

Place veggies and halloumi slices directly on the grill or use a grill basket.

Grill vegetables for 5–7 minutes, turning until tender and charred.

Grill halloumi for 2–3 minutes per side, until golden and crisp.

Plate together, drizzle with lemon juice, and garnish with fresh herbs if desired.
