Grilled Flatbread with Herbs Recipe

One evening, I had grilled chicken ready, a salad tossed, and nothing to soak up those good juices on the plate. I didn’t want to run to the store, so I threw together this flatbread, tossed it on the grill, and hoped for the best. What came off was soft, a little charred, full of herby flavor — and honestly? It stole the show. Now, I make it all summer long. It’s my trick for making dinner feel homemade and thoughtful, even when I’m winging it.
Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

¾ cup plain Greek yogurt

1 tablespoon olive oil (plus more for grilling)

1 tablespoon fresh herbs (like rosemary, thyme, or parsley), finely chopped
Instructions

In a large bowl, mix flour, baking powder, and salt.

Add yogurt and olive oil. Stir until dough forms, then knead until smooth (about 2 minutes).

Divide into 4 pieces and roll each into a thin oval or circle.

Brush both sides lightly with olive oil and sprinkle with fresh herbs.

Preheat grill to medium-high.

Grill flatbreads for 2–3 minutes per side until puffed and lightly charred.
