Grilled Cheese Sandwiches Recipe

Some days just call for grilled cheese. I remember making them for the kids when they were little — cutting them into little triangles with their favorite soup. But lately? I make them for me. On those long days when I just want something warm, simple, and familiar. I crisp the bread on the grill now for a little extra smoky flavor, and it changes everything. It’s still the same comfort food I grew up with, just turned up a notch — golden, melty, and exactly what I need at the end of a hectic day.
Ingredients

4 slices sourdough or your favorite sandwich bread

2 tablespoons softened butter

4 slices cheddar cheese (or your favorite melty cheese)

Optional: sliced tomato, cooked bacon, caramelized onion, or pesto
Instructions

Preheat your grill to medium heat (or use a grill pan).

Butter one side of each slice of bread.

Place cheese between two slices, buttered sides facing out.

Grill sandwiches for 2–3 minutes per side, pressing gently, until golden brown and cheese is melted.

Slice and serve hot. Add any extras you like — I love tomato and a swipe of pesto for a little twist!
