Grilled Calzones Recipe

One summer evening, I had leftover pizza dough and not a clue what to make for dinner. I didn’t want to crank up the oven, so I tried something different — folded the dough, stuffed it with cheese and sauce, and tossed it on the grill. When I opened the lid? Golden, puffed calzones with smoky flavor and melty cheese inside. Total win. Now I make these all the time — they’re fun, customizable, and feel like a cozy meal and a summer adventure all in one bite.
Ingredients

1 pound pizza dough (store-bought or homemade)

½ cup ricotta cheese

1 cup shredded mozzarella

½ cup pizza sauce or marinara

Optional fillings: pepperoni, sautéed mushrooms, spinach, olives, cooked sausage

Olive oil for brushing

Pinch of Italian seasoning or garlic powder (optional)
Instructions

Preheat grill to medium heat.

Divide dough into 4 pieces. Roll each into a circle about 6 inches wide.

Spread a spoonful of sauce, cheese, and optional fillings on one half of each circle, leaving edges clear.

Fold dough over and pinch edges to seal well. Brush outside lightly with olive oil and sprinkle seasoning if using.

Place calzones on the grill over indirect heat. Cover and cook 6–8 minutes, flipping once, until golden with light grill marks.

Let cool a minute before slicing. Serve with extra sauce for dipping!
