Ginger Lemon Iced Tea Recipe

I started making this when I felt run-down one summer and didn’t want another sugary juice. I boiled fresh ginger, added lemon, and chilled it into the most refreshing tea I’d ever had. It was like a gentle detox and cool-down all in one plus my kids love it over ice with a little honey. Now it’s a staple in our fridge all season long.
Ginger Lemon Iced Tea
Ingredients:
-
4 cups water
-
2-inch piece of fresh ginger, peeled and sliced
-
Juice of 1 lemon
-
1–2 tbsp honey or maple syrup (to taste)
-
Ice
-
Lemon slices or mint leaves, for garnish
Instructions:
-
Simmer the Ginger: In a saucepan, bring water and ginger slices to a gentle boil. Simmer for 10 minutes.
-
Sweeten & Cool: Remove from heat. Stir in lemon juice and honey. Let cool, then chill in the fridge.
-
Serve Over Ice: Fill glasses with ice, pour the tea, and garnish with lemon slices or fresh mint.
Sarah’s Tips:
-
Double the batch and keep a pitcher in the fridge all week.
-
For a fizzier twist, top with sparkling water before serving.
-
Want it stronger? Steep the ginger longer or add extra slices.
