Frosty Cucumber Mint Recipe

This one came together during a heatwave when plain water just wasn’t doing it. I had a cucumber, a few mint leaves, and a craving for something cold. One blend later, and boom — instant refreshment. It’s like spa water with a frosty twist, and it’s one of my go-to resets when the day feels heavy or hot. 

 

Ingredients:

  • ½ cucumber, peeled and sliced

  • ½ cup ice cubes

  • Juice of ½ lime

  • 5–6 fresh mint leaves

  • ½ cup cold water or coconut water

  • 1–2 tsp honey or agave (optional)

  • Garnish: cucumber slice, mint sprig

 

Instructions:

  1. Add cucumber, ice, lime juice, mint, and water to a blender.

  2. Blend until smooth and frosty.

  3. Taste and add sweetener if desired.

  4. Pour into a glass, garnish, and sip while icy and fresh!
