Egg Roll in Bowl Recipe

There were nights when I craved takeout but didn’t want the bloat or the bill. That’s when I found this gem all the flavor of an egg roll, but made in one skillet and way healthier. I throw everything in, let it sizzle, and dinner’s done. It’s now a summer weeknight staple in our house.
Ingredients:

1 lb ground turkey or ground pork

1 tbsp sesame oil (or olive oil)

1/2 onion, diced

2 cloves garlic, minced

1 tbsp grated fresh ginger (or 1/2 tsp ground ginger)

1 bag (14 oz) coleslaw mix or shredded cabbage

3 tbsp low-sodium soy sauce (or coconut aminos)

1 tbsp rice vinegar
-
1 tsp sriracha (optional, for heat)

Green onions and sesame seeds, for garnish
Instructions:

Heat oil in a large skillet over medium heat. Add onion, garlic, and ginger; sauté 2–3 minutes.

Add ground meat and cook until browned and fully cooked.

Stir in coleslaw mix, soy sauce, rice vinegar, and sriracha. Cook 4–5 minutes until cabbage is tender.

Top with green onions and sesame seeds. Serve warm.
