Easy Summer Berry Parfait Recipe

I remember one summer evening, the kids were playing in the sprinkler, and dinner was winding down on the patio. I wanted something light and sweet, but not heavy. I threw together a few things we had in the fridge—Greek yogurt, fresh berries, and some crunchy granola—and bam, this parfait was born. Now it’s our go-to summer dessert that looks fancy but takes less than 10 minutes!
Ingredients:
-
2 cups plain Greek yogurt (or vanilla if you like it sweeter)
-
1 tbsp honey or maple syrup (optional, for sweetness)
-
1 cup strawberries, sliced
-
1/2 cup blueberries
-
1/2 cup raspberries
-
1/2 cup granola (your favorite kind)
-
Fresh mint leaves (optional, for garnish)
Instructions:
-
In a small bowl, mix Greek yogurt with honey or maple syrup if using.
-
In serving glasses or jars, start layering: begin with a spoonful of yogurt, followed by a layer of berries, then granola.
-
Repeat the layers until the glass is full, ending with a few berries and a sprinkle of granola on top.
-
Garnish with mint leaves for a pop of color and extra freshness.
-
Serve immediately or chill for up to an hour if prepping ahead.
Sarah’s Tips:
-
You can swap the granola for crushed nuts if you’re grain-free.
-
Frozen berries work too—just thaw them first.
-
Want it extra creamy? Mix in a dollop of whipped coconut cream.
