Ingredients
For the meringue:

2 tsp arrowroot starch or cornstarch
For the topping:

1 cup whipped coconut cream or regular whipped cream

1 cup mixed fresh berries (strawberries, blueberries, raspberries, blackberries)

Optional: fresh mint, lemon zest, drizzle of honey

🔥 Preheat oven to 250°F (120°C). Line a baking sheet with parchment.

🥣 Beat egg whites until soft peaks form. Gradually add sugar, a spoonful at a time, until stiff peaks form and the mixture is glossy.

🍋 Gently fold in lemon juice, vanilla, and arrowroot starch.

🍥 Spoon meringue onto parchment in a circle (about 8 inches wide). Use a spoon to create a slight dip in the center.

⏲️ Bake for 60 minutes. Then turn off the oven, crack the door, and let cool inside for another hour.
