Ingredients

For the meringue:

  • 4 egg whites, room temperature

  • ¾ cup coconut sugar or organic cane sugar (finely ground for best results)

  • 1 tsp lemon juice or vinegar

  • 1 tsp vanilla extract

  • 2 tsp arrowroot starch or cornstarch

For the topping:

  • 1 cup whipped coconut cream or regular whipped cream

  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries, blackberries)

  • Optional: fresh mint, lemon zest, drizzle of honey

  1. 🔥 Preheat oven to 250°F (120°C). Line a baking sheet with parchment.

  2. 🥣 Beat egg whites until soft peaks form. Gradually add sugar, a spoonful at a time, until stiff peaks form and the mixture is glossy.

  3. 🍋 Gently fold in lemon juice, vanilla, and arrowroot starch.

  4. 🍥 Spoon meringue onto parchment in a circle (about 8 inches wide). Use a spoon to create a slight dip in the center.

  5. ⏲️ Bake for 60 minutes. Then turn off the oven, crack the door, and let cool inside for another hour.

  6. 🍦 Top with whipped cream and berries just before serving. Add mint or zest for extra flair!
