Chicken Lettuce Wraps Recipe

I love meals that feel light but still super satisfying — and these lettuce wraps hit that sweet spot.

I first made them on a hot summer night when no one wanted anything heavy (and I really didn’t want to turn on the oven). I had some ground chicken and lettuce in the fridge, so I quickly sautéed the meat with garlic, ginger, and tamari — and they turned out so good, the whole family devoured them.

Now, they’re a weekly favorite. They’re quick, full of flavor, and perfect for those nights you want something fresh and fun to eat with your hands.

Ingredients

  • 1 lb ground chicken

  • 1 tbsp olive oil or sesame oil

  • 2 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1/4 cup tamari or low-sodium soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp honey or maple syrup

  • 1/2 tsp chili flakes or sriracha (optional for heat)

  • 1/4 cup chopped green onions

  • 1 head butter or romaine lettuce (for wraps)

  • Optional toppings: shredded carrots, chopped peanuts, cilantro, extra lime

Instructions

  1. Cook the chicken:
In a skillet, heat oil over medium heat. Add garlic and ginger, then stir in ground chicken. Cook until browned, about 6–8 minutes.

  2. Make it saucy:
Stir in tamari, vinegar, honey, and chili flakes (if using). Simmer for 2–3 minutes until sauce slightly thickens.

  3. Assemble the wraps:
Spoon chicken into lettuce leaves. Top with green onions and any extras you love. Serve immediately.

Sarah’s Tips

  • No ground chicken? Use ground turkey or finely chopped mushrooms for a plant-forward version.

  • Meal prep tip: Cook the filling ahead of time and assemble wraps when ready to eat.

  • Serve with cucumber salad, rice, or pickled veggies for a full plate.
