When You Want Something Light, But Still Satisfying

You know those days when it’s way too hot to turn on the oven, and the idea of a heavy dinner just sounds... ugh? That’s when I reach for this recipe.

Chicken Caesar Lettuce Wraps are one of my go-to meals when I want something crisp, fresh, and super easy — but still filling enough to keep everyone happy.

It started one summer when I had leftover grilled chicken and a random head of romaine in the fridge. I whipped together a quick Caesar dressing, tossed it all together, and scooped it into lettuce leaves. My husband called it “fancy” and the kids devoured it like tacos.

Win-win.

 

Ingredients

For the wraps:

  • 2 cups cooked chicken breast, chopped or shredded (leftover or rotisserie works great)

  • 1/3 cup plain Greek yogurt

  • 2 tbsp mayo

  • 2 tsp Dijon mustard

  • 1 tbsp lemon juice

  • 1/4 cup grated Parmesan cheese

  • 1 garlic clove, minced

  • Salt & pepper, to taste

  • Romaine or butter lettuce leaves (8–10 large leaves)

Optional toppings:

  • Extra shaved Parmesan

  • Cracked black pepper

  • Crouton crumbles for crunch (optional)

  • Cherry tomatoes, halved

 

Instructions

  1. Make the dressing: In a medium bowl, stir together Greek yogurt, mayo, Dijon mustard, lemon juice, garlic, and Parmesan. Season with salt and pepper to taste.

  2. Toss the chicken: Add chopped chicken to the dressing and mix until well coated.

  3. Assemble the wraps: Scoop the chicken mixture into washed and dried lettuce leaves. Top with extra cheese, tomatoes, or croutons if desired.

  4. Serve immediately: These are best enjoyed fresh and cold.
