Blueberry Pie Recipe

The first time I made this…

Ingredients
For the crust:

1 ½ cups almond flour

½ cup oat flour

¼ tsp sea salt

⅓ cup coconut oil or butter, solid but soft

1 egg (or flax egg)

1–2 tbsp cold water, as needed
For the filling:

4 cups fresh or frozen blueberries

2 tbsp arrowroot starch or cornstarch

2 tbsp lemon juice

1 tsp lemon zest

¼ cup honey or maple syrup

½ tsp vanilla extract

Pinch of cinnamon (optional)

🥣 Make the crust: In a bowl, mix almond flour, oat flour, and salt. Cut in coconut oil until crumbly. Add egg and stir until dough forms. Add water only if needed.

❄️ Chill dough for 30 mins. Then roll between parchment sheets and press into a 9-inch pie dish.

🔥 Preheat oven to 350°F (175°C).

🫐 Make filling: Combine blueberries, arrowroot, lemon juice + zest, maple syrup, vanilla, and cinnamon in a bowl. Toss gently.

🥧 Pour filling into crust. Optional: Use leftover dough to create a rustic top crust or criss-cross strips.

⏲️ Bake 35–40 minutes until bubbly and golden.

❄️ Cool at least 30 minutes before slicing. Serve warm or chilled!
