10-Minute Grilled Watermelon with Feta and Mint Recipe

I never thought watermelon belonged on the grill… until I actually tried it. One bite of this smoky-sweet combo with salty feta and cool mint, and I was hooked. It’s now one of my favorite things to serve when we have friends over. It looks gorgeous, feels a little gourmet, and comes together in minutes. Trust me people will ask for the recipe before they even sit down.
Grilled Watermelon with Feta and Mint Recipe
Ingredients:

4 thick slices of watermelon (about 1-inch thick, cut into wedges or slabs)

1 tbsp olive oil

1/3 cup crumbled feta cheese

1/4 cup fresh mint leaves, chopped or torn

Juice of 1/2 lime
-
Pinch of flaky sea salt

Optional: cracked black pepper or a drizzle of balsamic glaze
Instructions:

Preheat the Grill
Heat grill or grill pan over medium-high. Brush watermelon slices lightly with olive oil. -
Grill the Watermelon
Grill each side for 2–3 minutes until grill marks appear and the edges caramelize slightly. -
Assemble
Place grilled watermelon on a platter. Top with crumbled feta, mint, a squeeze of lime, and a pinch of sea salt. -
Serve Immediately
Best enjoyed warm or at room temperature. Optional: finish with cracked black pepper or a balsamic drizzle.
