And these Zucchini Pizza Boats totally deliver that cheesy, saucy, melty craving… without the heavy crust.

I first made these when I was trying to cut back on refined carbs but still wanted something fun and comforting on a Friday night. These little boats hit all the pizza flavor notes but use fresh zucchini as the base—making them low-carb, clean, and surprisingly satisfying.

They’re quick to make, kid-friendly, and endlessly customizable based on what you’ve got in the fridge. Friday night pizza just got a clean-eating upgrade.

 

Ingredients

  • 3 medium zucchini, halved lengthwise

  • 1/2 cup marinara or pizza sauce (no sugar added)

  • 3/4 cup shredded mozzarella cheese

  • 1/4 tsp dried oregano

  • 1/4 tsp garlic powder

  • Optional toppings: turkey pepperoni, chopped olives, bell peppers, mushrooms, cooked sausage, fresh basil

 

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Use a spoon to gently scoop out the center of each zucchini half, creating space for the toppings (leave a bit of border so they stay sturdy).

  3. Place zucchini halves on the baking sheet and sprinkle lightly with garlic powder and oregano.

  4. Spoon pizza sauce into each zucchini, then top with shredded cheese and your favorite toppings.

  5. Bake for 15–18 minutes, or until zucchini is tender and cheese is melted and bubbly.

  6. Let cool for a few minutes, then serve warm and enjoy!
