Spicy Grilled Turkey Drumsticks Recipe

Okay, I’ll admit it — I used to save turkey for the holidays only. But these spicy grilled drumsticks changed my mind. They’re juicy, smoky, and packed with flavor — like BBQ chicken’s bolder, leaner cousin. The marinade is fiery but balanced, and once they hit the grill? That crispy charred skin is next-level. We make these for weekend cookouts, but honestly… I’d eat them any night of the week.

 

Ingredients:

For the Drumsticks:

  • 4 turkey drumsticks (about 2.5–3 lbs total)

  • 1 tbsp olive oil

  • Salt and pepper

For the Spicy Marinade:

  • 2 tbsp hot sauce (like Frank’s or Sriracha)

  • 1 tbsp smoked paprika

  • 1 tbsp Dijon mustard

  • 1 tbsp apple cider vinegar

  • 1 tbsp honey or maple syrup

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1/2 tsp chili flakes (adjust to taste)

  • Juice of 1 lime

 

Instructions:

  1. Prep the marinade: In a bowl, whisk together hot sauce, paprika, mustard, vinegar, honey, garlic, cumin, chili flakes, and lime juice.

  2. Marinate the turkey: Pat drumsticks dry and season with salt and pepper. Rub with olive oil, then coat well in the marinade. Cover and refrigerate for at least 1 hour (or up to overnight).

  3. Grill: Preheat grill to medium heat. Place drumsticks on the grill, turning every 10 minutes and basting with leftover marinade. Grill for 35–45 minutes, or until internal temperature reaches 165°F and skin is crisp.

  4. Rest & serve: Let the drumsticks rest for 5–10 minutes before serving. Serve with lime wedges and your favorite sides!

 

Tips & Swaps:

  • No grill? Bake at 400°F for 45–50 minutes, then broil for extra crisp.

  • Tame the heat: Use less chili or add more honey for a milder version.

  • Serve with: Corn on the cob, coleslaw, or a tangy cucumber salad.
