This is one of those recipes that feels fancy—but takes almost no effort at all.

These Sheet Pan Garlic Butter Steak Bites are tender, juicy, and packed with flavor, all roasted together with your favorite veggies on a single pan. I first made this on a weeknight when I was craving something hearty but didn’t want to spend the whole evening cleaning up. One pan, 30 minutes, no stress—and a dinner that tastes like a restaurant meal.

It’s clean, filling, and perfect for busy nights when you still want to serve something that feels a little special.

Ingredients

  • 1 lb sirloin steak, cut into bite-sized cubes

  • 1 tbsp olive oil

  • 1 tbsp melted butter or ghee

  • 2 cloves garlic, minced

  • 1 tsp dried parsley or Italian seasoning

  • Salt and black pepper, to taste

  • 2 cups baby potatoes, halved

  • 1 cup green beans or broccoli florets

  • Optional: fresh parsley or lemon wedges for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment or foil for easy cleanup.

  2. In a bowl, toss steak cubes with olive oil, melted butter, garlic, parsley, salt, and pepper. Let sit while you prep the veggies.

  3. On the baking sheet, spread baby potatoes and veggies in an even layer. Drizzle with a little olive oil, salt, and pepper.

  4. Roast the vegetables for 15 minutes, then remove the pan, stir veggies, and add the seasoned steak bites.

  5. Return to the oven and cook for another 8–10 minutes, or until steak is browned and veggies are tender.

  6. Garnish with fresh parsley or a squeeze of lemon before serving, if desired.

Why I Love This Dinner

It’s bold, buttery, and packed with protein—but still clean and balanced. The garlic butter gives the steak that crave-worthy flavor, and the roasted veggies soak it all up. Plus, it all happens on one pan, which makes this busy mom very happy.

This was one of the first recipes that helped me realize clean eating doesn’t have to mean “light” or boring—it can be rich, comforting, and still feel really good in your body.
